Kid pleasing chicken

We've come to find that our kids LOVE chicken cordon bleu. Just the thought of the combination of chicken, ham and Swiss cheese makes me salivate. We purposefully cooked an extra chicken breast tonight so Jeremiah could bring leftovers to work tomorrow. His leftovers almost didn't make it. Amie and Matthew finished off most of one on their own, pluss their honey glazed carrots. It's a good thing I am incapable of cooking small meals! So, for those of you that want an easy chicken cordon bleu recipe but hate the idea of spending $5-7 for the frozen kind (that still takes 35 minutes to cook.) Here it is:

4 boneless, skinless chicken breasts
4 slices of ham
6 slices of Swiss cheese
1 packet of bread crumbs or shake and bake
Salt and pepper to taste

Slice the chicken breats almost entirely down the center of the breast. Fold the top half back (it should now resemble open butterfly wings) lightly sprinkle salt and pepper over the breast, inside and out. Layer a slice of swiss cheese and ham on the inside of the breast then close the breast. You can secure it with a toothpick but it is not necessary. Coat the outside of the breast with your bread crumbs, pat them on to make sure they stick well. Bake in a preheated oven at 350 degrees for 30-35 minutes. Top with 1/2 slice of Swiss cheese and continue for 3-5 minutes until the cheese has melted.

I promise it sounds much more complex than it really is!

I made two of the appliqué shirts on my crafty to-do list... I wish I hadn't. For some odd reason Jeremiah has been itching for an excuse to go shopping with the kids in tow sans the mommy. I hate that plan and will veto it every time regardless of how much me time it gives me. Going shopping is my excuse to grab a much needed craft item or piece of produce I've been secretly craving. Miah really needs to find a way to drop better hints that he's trying to something sweet for me covertly. His way just makes him seem like a McJerk combo at McD's! Tonight he finally got out of the house with Amie in tow, Matty and I were in a bath when he snuck out. (side trip, forgive me! My stinky monkey streamed off in the tub then laughed about it as he stomped around in his puddle. If that wasn't bad enough, after draining the tub I ran off to get him a diaper. When I returned he was starring admiringly at a bunch of little foul pellets he put in my tub... I,m so glad this all happened when we were done!) When the perky duo returned from their adventure at Walmart they brought gifts. Some much more needed than others, but none unappreciated. I had the pleasure of putting away 2 gallons of milk, 1 mondo jug of apple juice, delicious romaine lettuce and a brand new sewing machine! Do you see my frustration with the completed shirts now? I fought with that darn old machine for hours this afternoon and wasted so much thread. I hate seeing the underside of anything sewn with the old machine, it reminds me of an old Halloween wig that's all snarled and ratty... At least I have one more shirt to make and a whole bunch of uniforms to update. I'm excited to see this new machine in action, it's so sleek and beautiful! It seems like the dang thing has a billion different stitches and it's all digital, it even has a auto-threaded for the needle! I guess now I need an excuse to play around a bit more with sewing.
